Andi Lew Amaze Balls –

Ingredients:

In the kitchen with Andi Lew. The Wellness Woman returns to give us a healthy snack when you’re on the run.

And Lew Amazeballs: Makes 20

Ingredients:

3 Cups Almond Meal
3 Cups Organic Coconut Chips
2 Cups Pitted Dates
Zest of 1 Lemon
2 heaped tb spoons Coconut Oil (solidified)
1 tb spoon Coconut Syrup
1 Cup chia seeds
1 C desiccated coconut

Method:

1. Add Chia seeds to 1/2 C water and leave to sit
2. Add Almond Meal, Coconut Chips, Dates, Lemon Zest, Coconut Oil & Syrup to food processor
3. Add expanded Chia seeds to mixture
4. Blend in food processor until mixed well
5. Roll mixture in to small balls and coat in desiccated coconut
6. Keep in the fridge to maintain their freshness
